Even though it is summer, I have been craving being in the kitchen lately! I love finding healthier options to make and trying them out. This one was a first for me, and I know I will be making them again. They were simply delicious, and just the perfect amount of sweetness. Thanks to Nourish Move Love for the recipe inspiration. Easy Oatmeal Chocolate Chip Cookies
Ingredients:
- 2 cups of oats
- 2 mashed bananas
- 1 cup nut butter of choice
- 1/2 cup dark chocolate chips or cacao nibs
- A pinch of sea salt mixed in (My added touch to the recipe – you could choose to top with sea salt for a different option)
- 1 tsp maple syrup (Another added touch of mine)
- Optional add-ins: flax seed, chia seeds, raisins, nuts
Directions:
- Place rolled oats in blender or food processor and blend until oats become oat flour. The consistency is up to you!
- Mix together mashed bananas, nut butter and add-ins with oat flour. Add in chocolate chips and mix well.
- Drop spoonfuls of dough onto a parchment lined & baking sheet. Don’t forget to spray with cooking spray!
- Bake at 350 degrees for 15-17 minutes. The original recipe called for 10 minutes, but I found the 15-17 allowed them to set better and not be as mushy. Again, your preference!
- Remove cookies from oven, let cool, and enjoy!
