I am so excited to be sharing a new salad recipe I discovered last week. I love salads, especially in the summertime, but I feel like I can get burnt out on them quickly if they don’t have solid ingredients/toppings in them that I actually enjoy. I’ve never tried fruit in a salad before, and this changed the game for me. It is so easy, refreshing and quick to make.
What You’ll Need:
- Lettuce/Greens of your choice. I used these power greens from Costco and love them. Pro tip: rip or chop them up prior to serving!
- Meat of your choice: Chicken or Shrimp. I used these chicken nuggets, also from Costco, but also have tried fresh chicken thigh meat in it. Both are great choices!
- Cucumbers
- Strawberries
- Poppyseed dressing
- Balsamic Glaze
- Optional add-ins: I had a follower on Instagram tell me that she tried it and added walnuts to the top and they were a delicious addition!
All you do is simply chop everything up and toss it together in a bowl and you’re ready to enjoy!
