When it starts warming up in the spring time, I get excited to make smoothies again! I don’t know if it’s just me but I cannot do smoothies in the dead of Minnesota winter. I wish I could because I love the nutrients you can pack into smoothies! Mango is my favorite fruit to use in smoothies and I go back and forth between kale and spinach.
My easy, everyday green smoothie I’ve been loving this spring goes a little like this:
Frozen mango chunks
Kale
Chia Seeds
2 scoops of Vital Proteins Collagen Powder
3 equal parts – unsweetened vanilla almond milk / orange juice / water
I throw everything in my ninja blender all at once and no particular order and it works fantastic and makes it a breeze to whip together any smoothie. It’s also super easy to clean, too. For ingredient amounts, I eyeball it to make 2 nice size smoothies which ends up being around 40oz on the blender so I just aim for that. I save the other one for the next day!
I like a variety of smoothies but this seems to be my favorite because of how simple and refreshing it is! I also enjoy more in-depth smoothie recipes from Liz Moody’s Healthier Together cookbook where you can sneak vegetables in and even more nutrient-dense ingredients. I can’t wait to experiment with more smoothie recipes all summer long.
